The Butler’s Pantry, Farm Kitchen and Bar is set in the beautiful Butler family farm, Heaven Farm. Started by John and Margaret Butler, the Butler family have been Sussex farmers for over 300 years and continue to bring you the best of Sussex produce to this day with a passion for high standards of animal welfare, and using local seasonal produce.
Every season in Sussex provides The Butler’s Pantry with fabulous produce, which is shown to its full potential by Mark Thomas Raffan, who previously held a Michelin star at Gravetye Manor for many years, as Chef Proprietor. Mark, who trained at The Waterside and La Gavroche under Albert and Michel Roux, was also the personal chef for His late Majesty, King Hussein bin Talal of Jordan. He shares the Butler family’s passion for sustainable farming in Sussex, and is creating a seasonal Sussex menu that encompasses their ethos of Sussex sustainability and also promotes it to children. They are passionate ambassadors of the British countryside, evident throughout their menus and events.
